As part of our 5th annual benefit, we're holding a virtual cooking class with Chef Chuy Valencia. Join us on Thursday, April 1 at 5:00 pm CDT to follow along as Chuy shows you how to craft a cauliflower ceviche tostada decked out with guacamole (vegan) and how to assemble pan-seared salmon with homemade salsa verde, roasted fingerling potatoes, fresh peas, and asparagus. We’ll send each registrant a list of ingredients and suggested drink and dessert pairings to round out your meal.
Chuy, a graduate of the California Culinary Academy, worked at Frontera Grill in Chicago under famed chef Rick Bayless before opening his own restaurant, Chilam Balam. The restaurant’s success led him to a stint on Bravo TV's Top Chef Season 9 and a showcase on Diners, Drive-Ins and Dives.
All proceeds will support our mission to create an Illinois where everyone has access to a good, stable home.
Each registration includes a raffle ticket to win a $25 gift card for Spice House.

Chuy Valencia was born and raised in Sonoma County by a family of hardworking immigrants who grew food in the backyard and always had a pot of something delicious simmering on the stove. After graduating from the California Culinary Academy in San Francisco in 2005, he moved to Chicago to work at Frontera Grill as a sous chef under famed chef Rick Bayless. In 2009, he opened Chilam Balam in Lakeview to positive acclaim, which led him to a stint on Bravo TV's Top Chef Season 9 and a showcase on Diners, Drive-Ins and Dives. In 2013, Chuy moved back to Sonoma County, where he is now beginning to launch a private chef service and hopes to write the cookbook he's always wanted to create.
