Cheese Blintzes

Amy Rosen Cooking By Design

INGREDIENTS

FOR THE BATTER:

2 eggs

1 cup milk

1 cup sifted flour

½ teaspoon vanilla extract

 Pinch of salt

1 tablespoon melted butter

 Butter for frying

FOR THE FILLING:

12 ounces farmer's cheese**

4 ounces cream cheese, softened

⅓ cup sugar

1 teaspoon lemon juice

1 teaspoon vanilla extract

1 egg yolk

 Pinch of salt

TOPPINGS (optional and delicious):

 Powdered sugar

 Strawberries, sliced thin

 Dollop of sour cream or Greek yogurt

** If you can’t find Farmer’s Cheese or don’t like it, you have options!
You can make a fruit filling, like apple, strawberry or blueberry filling.  You can buy pie filling or make your own.  Rabbi Miller and I can send you the recipes, but you will need to make them in advance.
